Ingredients:
For the Chicken:
- 4 boneless, skinless organic chicken breasts
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 tsp lemon zest
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 tsp paprika
- Salt and pepper to taste
For the Vegetables:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions:
- Marinate the Chicken:
In a bowl, mix olive oil, lemon juice, lemon zest, garlic, parsley, dill, paprika, salt, and pepper. Add chicken breasts, coat well, and marinate for at least 30 minutes. - Prepare the Vegetables:
Toss broccoli, bell pepper, and zucchini with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread evenly on a baking sheet. - Cook the Chicken:
