I Eat This Every Day…

“Are you going to stay on this raw food diet forever?"
I posted a quick story about my healing progress the other day, and this is a question that has come up a lot…
 
Let me tell you, it’s taken me two months to stop craving cheese, bread, and pasta… this Irish/French/Italian girl misses it sometimes.
 
But I am getting to a place where I can be surrounded by those foods and they no longer tempt me (for the most part).
 
Why?
 
It’s not because I don’t love those foods anymore, but because of two things:
  1. I have a deep understanding and experiential knowledge as to why they’re better. I feel amazing when I eat real food and horrible when I don’t. And the more cleansed my body becomes, the more I feel the contrast between the two worlds. 
  2. The real, raw foods I am eating right now tastes SO DARN GOOD.
After much experimenting in my kitchen, I’ve landed on two salads that I could eat every day… and right now I do. 
 
I am going to share one of them here that is so bountifully rich in living nutrients, it’ll make your body, beauty, and life sing.
 
You ready for some simple, actionable recipes?
 
Coming your way:
 

Radiant Salad

Grab a big bowl so your greens don’t spill over. Here's what you'll need:
  • 1 cucumber (farmers market or garden fresh is best - organic if those aren’t available)
    ➤ Deeply hydrating and rich in silica, cucumbers support connective tissue and flush toxins through the lymphatic system.

  • 1 red onion
    ➤ High in quercetin and sulfur compounds, red onions help reduce inflammation and support liver detoxification.

  • 4 heaping forkfuls of sauerkraut (choose your favorite!)
    ➤ Packed with probiotics and enzymes, sauerkraut boosts digestive health, balances gut flora, and enhances nutrient absorption.

  • Handful of microgreens (I love broccoli and clover)
    ➤ These tiny greens are nutrient powerhouses up to 20 times more potent than their adult version—broccoli microgreens in particular are rich in sulforaphane, a compound shown to fight inflammation and support cellular detox.

  • Juice of 1 fresh lemon
    ➤ Alkalizing and high in vitamin C, lemon juice aids liver cleansing, supports skin collagen production, and helps break down fat.

  • 4 tbsp olive oil (make it raw, cold-pressed, and vibrant)
    ➤ Loaded with polyphenols and healthy fats, olive oil lowers inflammation, supports hormone health, and nourishes skin from the inside out.

  • 4 tbsp apple cider vinegar
    ➤ Raw ACV improves stomach acid levels, enhances digestion, and helps regulate blood sugar while gently detoxifying the body.
I also grab a little bit of fresh dill and oregano from my herb garden for a pop of vibrant flavor and medicinal bennies.
 
Also, feel free to adjust the dressing to taste. I love mine bursting with flavor. 

 

How To:

1. Chop your cucumber into quarters lengthwise, then slice.
2. Dice your onion.
3. Toss both in a big bowl with the sauerkraut and microgreens.
4. Drizzle in your dressings: one whole lemon, freshly squeezed + olive oil + ACV.
5. Toss together. Add cracked pepper if you’d like.
 
No cheese, dairy, or salt. This is fast food at its finest.
